Its the festive season, who doesn’t love a sweet treat? Fortunately there are ways of swapping the usual brightly coloured confectionery for some truly delicious yet also healthy, yes actually good for you treats, …and you can still wrap them in something colourful!
I asked nutritional therapist Louise Mercieca author of How Food Shapes Your Child to share these recipes.
Chocolate hazelnut truffles
1 cup pitted dates
1 cup blanched hazelnuts
30-40g dark chocolate
½ cup Chia seeds
1 tsp vanilla essence
1 tbsp. maple syrup
Blitz the hazelnuts to a crumb add in the vanilla.
Remove and blitz dates with maple syrup until a sticky paste, then return the hazelnuts to the mix. Add the chai seeds and melted chocolate.
Roll into balls and chill in the fridge
Keeps in the fridge for 5-7 days!
Apricot and Date spread
½ cup soft dried apricots
½ cup pitted dates
1 tbsp maple syrup
100ml cold water
Place all ingredients in a pan on a low heat for 20-25 minutes, keep an eye on it adding a little more water if you need to, give it long enough to thicken and look sticky
Allow to cool slightly
Transfer to food processor and blitz until smooth
Store in the fridge in an airtight jar or container for 5-6 days
Of course with both these recipes, the likelihood of any left over to store in the fridge is slim…
